1/2 tsp | Salt |
1/8 tsp | Pepper, Black |
5 Tbsp | Butter, stick |
3 Tbsp | Flour, all purpose |
1/2 tsp | Onion Salt |
dash | tabasco sauce |
Serves: 4 people
Beat eggs with 1/3 c. milk, salt, and pepper. Melt 2 Tbsp butter in skillet and add egg mixture. As eggs cook, push edges to center to make big "wrinkles."
Meanwhile, make the thin white sauce:
Melt 3 Tbsp butter in microwave in a bowl, stir in flour and 1 cup milk. Cook about 3 minutes or until hot. Add remaining milk a cup at a time stirring after heating. Continue to cook as needed until thickened. Add a dash of tabasco, onion salt, and salt and pepper to taste.
Mix in eggs and keep hot. Serve over toasties.
Note: Eggs and sauce can be made the night before, cooled and refrigerated separately. Reheat sauce, stir till smooth. Add eggs and heat.
