After a change in hosting solutions we are back up and running. Hopefully this new solution will be much more reliable. There will be some upcoming changes to the codebase, so please report any bugs/typos to your friendly neighborhood SysAdmin.
| 1 bag | McCormic Enchilada Sauce Mix |
| 1 1/2 cups | water |
| 1 (8oz) can | Tomato Sauce |
| 1 lb | ground beef |
| 9 | Tortillas |
| 1 cup (shredded) | Cheddar Cheese |
Serves: 6 people
Stir Sauce Mix, water and tomato sauce in medium pyrex bowl. Microwave 1-2 minutes on high.
Brown meat in a large skillet on medium-high heat. Drain fat. Stir in 3/4 cup of the sauce.
Heat tortillas according to package directions; spoon 1 Tbsp on tortilla shell. Place ~1/4 cup of meat on tortilla and roll up; place seam-side down in greased 11x7 in baking dish. Pour remaining sauce over enchiladas. Top with shredded cheddar cheese.
Bake in 350F oven 15 minutes or until sauce is bubbly and cheese is melted.
