Watermelon Rind Picklesgluten free

1-9 lbWatermelon rind
1/2 cSalt
as neededwater
4-5ginger root
1 QtVinegar, Distilled White
5 lbSugar, white
3 tspclove, whole
6 sticksCinnamon

Serves: 8 people

Soak 1 to 9 pounds of watermelon rind in salt water overnight. (1/2 cup salt to 1 gal water)

In the morning, drain, and cover with water to which 1 tsp alum (Potassium alum) has been added, let come to boil. Drain. Again cover with water to which 4 to 5 ginger roots have been added. Boil until tender and drain.

Make a syrup of 1 qt vinegar, 5lb sugar, 3 tsp cloves, 6 cinnamon stick or 3 tsp ground cinnamon tied in a bag. Simmer rind in syrup 30 min. Pack in jars and seal.
