2 lb | Beef stew meat |
2 Tablespoon | olive oil |
1 (sliced, separated) | onion |
1/2 cup (chopped) | green pepper |
1/2 teaspoon | Salt |
2 cup | beef broth |
1 cup (diced) | Tomatoes |
1/2 cup | BBQ sauce |
3 Tablespoon | corn starch |
Serves: 8 people
Brown meat in hot oil. Place onion and green pepper in bottom of crock pot and top with browned meat, salt and pepper. Combine beef broth, tomatoes, and BBQ sauce. Poor over entire mixture in crock pot and stir gently. Cover and cook on low for 8-10 hrs.
Blend cornstarch with 1/4 cup cold water. Stir into stew and turn on high. Cover and cook until thick and bubbly. Serve over hot rice.
