Serves: 24 people
Preheat oven to 350F. Combine cookie dough, extract and flour in a bowl. Spread dough evenly into a 15-inch baking stone with a rolling pin. Flour roller if necessary. Bake for 20 min.
As cookie is baking, chop mints finely with a food chopper. Remove baked cookie from oven and immediately sprinkle vanilla chips evenly over cookie crust. Wait 2-3 min. Spread chips evenly into a thick layer with icing spreader. Sprinkle mints over vanilla layer.
Run a knife under crust to loosen from baking stone. Cool 5 min. Cut with a pizza cutter into squares and serve.
